RED PEPPERS - SPINACH-FETA- QUINOA RECIPE
This makes a great side dish or full meal with a salad. 1/2 cup quinoa - be sure to rinse before cooking 1 cup chicken or veggie broth 1/4 cup chopped roasted red peppers 1/2 cup spinach 1 small onion chopped 2 garlic cloves sliced thin 1 tsp Olive Oil 1/4 cup Feta cheese Add quinoa to chicken broth, bring to boil and let simmer for 15-20 mins Saute onion & garlic in olive oil. Add quinoa,spinach, and red peppers & cook to spinach is wilted. Add Feta Cheese and stir into mixture. Fresh pepper to taste and serve. You can also add mushroom and/or black olives and other ingredients. Enjoy!
